BIRD EGGS IN POTATO NEST

Potatoes 125gms
French beans 10gms
Carrots 20gms
Celery 5gms
Onions 10gms
Peas 20gms
Ginger 5gms
Salt & pepper to taste

FOR BINDING-

Eggs / milk panada / corn flour – as required

FOR COATING BATTER-

Corn flour mixed with water / egg wash
Fresh bread crumbs 100gms
Oil to fry

PREPARATION:

Wash, peel and rewash potatoes. Cut into rough dices. Boil in salted water until fully cooked. Drain, pass through a sieve. Add salt, pepper and pinch of nutmeg. Keep aside. Wash and finely chop vegetables. Shell peas. Boil the vegetables in salt water. Drain, squeeze out the moisture. Mix with the potatoes. Add in a binding of your choice. Divide into small balls, shape into eggs (oval shape). Dip in the batter and apply bread crumbs all over. Deep fry in hot oil until golden and crispy. Drain on an absorbent paper. Arrange on a nest made from straw potatoes and serve with a tangy chutney / ketchup / relish. Serve hot.

FOR POTATO NEST –

Potatoes 1nos
Salt to taste
Oil to fry

PREPARATION:

Wash, peel and rewash potatoes. Trim the sides. Slice very thinly (paper thick). Cut into the straws. Blanch in salt water. Drain, dry in a neat and clean cloth. Put into a soup strainer. Press with a laddle. Immerse in hot oil and fry until golden and crispy. Take out and drain on an absorbent paper.
