SALAMI ROLLS ON TOMATOES
Salami slices                           3slices
Tender French beans             30gms
Tomatoes                               50gms
Onions (chopped)                  5gms
Capsicum (chopped)             5gms
Carrots (chopped)                  5gms
Celery (chopped)                   5gms
Cooking cheese                      5gms
Salt and pepper                     to taste
Sugar                                    a pinch
Fresh basil                              1 leaf
Olive oil                                  10ml
GARNISH:
Black olives
Preparation:
String and cut beans into neat batons. Cook in boiling, salted water uncovered till done. Drain, refresh and dry in a neat towel. Blanch, deskin and deseed tomatoes. Fine chop them. Heat oil, saut̩ onion, garlic and remaining vegetables for 30 seconds. Add tomatoes seasoning, sugar, basil and cooking for 8 Р10 minutes. Add in grated cheese. Place the tomatoes in the centre of a plate. Put beans in the centre of salami and roll the slices. Place the salami rolls on the top of tomatoes.
Garnish and serve immediately.

FOR GOLDEN CRISPIES
Flour                                       100gm      
Oil                                            20ml
Salt                                         a pinch
Water                                     20-25ml
Fat to fry
GARNISH:
Peppercorns and red chili powder
PREPARATION:
Peel mangoes, cut into ½ lengthwise, remove seed. Grate the mangoes. Julienne the ginger. Heat sugar in a pan over low flame. When it starts to caramelize, add all the ingredients and cook over low flame till cooked and the liquid has evaporated. The mixture should give a glaze. Remove cinnamon and bay leaf.
For golden crispies-
Rub flour, salt and oil with fingertips. Add water and knead lightly to make smooth and workable dough. Cover and rest the dough for 10 minutes. Divide the dough into small balls (marble size). Roll out into thin circles of 1 ½ inches diameter. Perforate with fork at places and deep fry in hot oil, turning occasionally till golden and crispy. Remove from oil and drain on an absorbent paper.
To assemble, place crispies on a plate, place a spoonful of the prepared relish mixture and garnish as shown in the pic.

PAN FRIED CHICKEN BREAST WITH BEANS
Chicken breast                       1pc (boneless)
Olive oil                                  50ml
Worcestershire sauce            2ml
Mix dried herbs                     a pinch
Salt                                          to taste
Mustard powder          a pinch
Crushed peppercorns            6 nos
French beans                         30gms
Lemon juice                           5ml
Garlic (chopped)                    3 cloves
Garnish: tomato flower, tomato slice and lemon wedge
Preparation: Trim the chicken breast and rub in marinade of 10ml oil, Worcestershire sauce, herbs, mustard powder, peppercorns and salt. Keep aside for about 1 hour. String beans cut into half lengthwise and again half them. Boil and cook in salted water till done and crunchy. Drain, refresh and dry in neat and clean cloth. Toss the beans in dressing of 10ml oil, limejuice, salt, garlic. Place the beans in the center of a half plate. Heat the remaining oil, brown the chicken breast on both sides and cook on a gentle fire, turning the chicken frequently. When cooked put the rest over the beans and place the plate garnishes. Serve immediately.

GARNISH- parsley sprig, lemon star and tomato wedge

PREPARATION:
Julienned onion, capsicum and red bell pepper. Toss in 5ml oil, season and place on a half plate. Season cottage cheese, and grill on both the sides. Arrange over the julienned vegetables. Top with the tomato topping.

FOR TOPPING -
Heat oil, sauté brunnoise (fine dices) of celery, beans, mushrooms and carrot for a minute. Add in blanched, deskinned, deseeded and chopped tomatoes. Cook for about 10 minutes. Add seasoning, torn basil and sugar.

Note –
·       Vegetable should stay crunchy.
·       Can be served hot / warm.

Fine chopped carrots            20gms
Mayonnaise                           10gms
Crushed peppercorns            2nos
Garnish – parsley / coriander, tomato segment, lemon star, tomato diamonds
Preparations:
Separately boil beans and carrots. Drain and keep aside. Mix 10gms each of beans and carrots with mayonnaise and crushed peppercorns. Chill. Boil egg. Peel, cut lengthwise, scoop out yolk and core the egg to deepen the cavity. Fill in the mayonnaise mixture.
 For presentation, place the remaining vegetables on the plate, arrange the egg halves and garnish with diamond of tomatoes. Place in the plate and garnish around.
