STARTER AND SALAD NOS...57





SALAMI ROLLS ON TOMATOES
Salami slices                           3slices
Tender French beans             30gms
Tomatoes                               50gms
Onions (chopped)                  5gms
Capsicum (chopped)             5gms
Carrots (chopped)                  5gms
Celery (chopped)                   5gms
Cooking cheese                      5gms
Salt and pepper                     to taste
Sugar                                    a pinch
Fresh basil                              1 leaf
Olive oil                                  10ml
GARNISH:
Black olives
Preparation:
String and cut beans into neat batons. Cook in boiling, salted water uncovered till done. Drain, refresh and dry in a neat towel. Blanch, deskin and deseed tomatoes. Fine chop them. Heat oil, sauté onion, garlic and remaining vegetables for 30 seconds. Add tomatoes seasoning, sugar, basil and cooking for 8 – 10 minutes. Add in grated cheese. Place the tomatoes in the centre of a plate. Put beans in the centre of salami and roll the slices. Place the salami rolls on the top of tomatoes.
Garnish and serve immediately.
