STUFFED EGGS

Eggs                                        1nos
Fine chopped beans              20gms
Fine chopped carrots            20gms
Mayonnaise                           10gms
Crushed peppercorns            2nos
Garnish – parsley / coriander, tomato segment, lemon star, tomato diamonds
Preparations:
Separately boil beans and carrots. Drain and keep aside. Mix 10gms each of beans and carrots with mayonnaise and crushed peppercorns. Chill. Boil egg. Peel, cut lengthwise, scoop out yolk and core the egg to deepen the cavity. Fill in the mayonnaise mixture.
 For presentation, place the remaining vegetables on the plate, arrange the egg halves and garnish with diamond of tomatoes. Place in the plate and garnish around.
