INDIAN DISH!!

cauliflower flowerettes 250gm
clarified fat 50gm
onion sliced 20gm
ginger garlic paste 5gm
red chilli powder 1/2tspn
coriander seeds 1/2tspn
raisins 1tspn
cashewnut paste 1tspn
fenugreek leaves a pinch
garam masala powder a pinch
beaten curd 100ml
mawa 50gm
fried cashewnuts 4 - 5 nos
crushed peppercorns 2nos
oil to fry
salt to taste
water 50ml

PREPARATION:

Wash cauliflower flowerettes. Deep fry in hot oil till half cooked. Remove. Heat fat, crackle coriander seeds, shallow fry onions till golden, add in ginger - garlic paste. Stir for 30 seconds. Add red chilli powder, curd, peppercorns, stir till fat leaves the mixture. Add cauliflower, salt, mawa, water, cover and cook over slow fire until done. Remove the lid, sprinkle garam masala powder, fenugreek, another 30seconds, without breaking the cauliflower flowerettes. Dish out.

Garnish and serve with  hot parantha.

DESSERTS!!

today's recipe!!



KAALA JAMUN (BLACK BEAUTY)

Mawa 250gm
Raisin 14nos
Flour (maida) 50gm
Fat to fry
Saffron a few strands
Green cardamom 5nos

SYRUP-

Sugar 400gm
Water 225ml
Rose water 10ml
Lemon ¼ no

PREPARATION:

Mash the mawa and rub between the palm of hand on a table till absolutely smooth. Add in flour, mix and knead slightly. Divide the dough into 14 equal parts. Shape into balls. Press the ball and stuff with raisin and cardamom seed. Again round them into smooth balls (without cracks). Repeat for all balls. Cover with moist cloth and keep aside. Heat fat in a kadahi, add the balls, off the fire, slightly rotate the kadahi for a minute. Transfer back to slow heat and deep fry until dark (deep) brown. Remove and add into the sugar syrup. Serve hot.

FOR SYRUP-

Bring sugar and water to a boil. Add lime juice, remove scum. Cook over slow fire to a one string consistency. Flavor with rose water.

STARTER!!

SAFFRON EGGS

Eggs 2nos
Salted butter 20gms
Saffron a pinch
Milk 1tspn
Fresh cream 2tspn

GARNISH-

Red bell pepper diamonds
Black olives
Tomato flowers

PREPARATION:

Hard boiled eggs cool in cold water. Remove shells. Divide lengthwise. Scoop out the yolks. Pass the yolk by rubbing through a fine sieve. Cream butter and mix with the yolks. Add in cream along with saffron dissolved in lukewarm milk. Mix thoroughly. Put the yolk - butter mixture in a piping bag. Pipe out into the cavity of the boiled egg white. Garnish neatly and place over a leafy base on a plate and serve as a starter.

FISH COMPOSITION

  • Fish is nutritionally very rich.
  • Fish is a rich source of protein, essential oils and minerals.
  • The approximate composition of fish is:

  1. Moisture 40 - 90%
  2. Protein 06 - 19%
  3. Oil 01 - 64%
  4. Ash 0.4 - 1.5%





REPRODUCTION

  • Generally fish lay eggs and the fertilization is external.
  • In some cases the fish may give birth directly to living young.
  • In some sharks, the embryo is completely developed internally (internal fertilization) and the female gives birth to fully developed young one.
  • Usually fish lay a very large number of eggs, as they do not exhibit parental care.

FOOD AND FEEDING

·         Based on feeding habits, the fish can be grouped into
1.       Herbivorous (sardines and grass carp)
2.       Carnivorous (sharks and barracuda)
3.       Omnivorous (catla)
4.       Detritivorous ( carp and tilapia)




     MIGRATION

·         Most of the fish migrate either for feeding or breeding. Two most important migrations’ are
1.       Anadromous are those which migrate upstream for spawning. Eg. Salmon and shad
2.       Catadramous are those which migrate from upstream to brackish water. Eg. Eels, fresh water prawns.


CLASSIFICATION OF FISH
·         Fishare broadly classified as

1)      FIN FISH: They are verte brates. They are further subdivided into

a)      LEAN FISH:  are mainly flat, contains oil, only in the liver. They are mostly deep sea fish. Ex. Pomfret, Sole, Turbot etc.

b)      OILY FISH: are mainly round and contain fat all over the body. Fat varies from 1.5 % - 20% in different varieties. These are more colourful and move towards the surface. Ex. Mackerels, sardines, carp, rohu, trout masheer etc.

2)      SHELL FISH:  have a shell covering the body. They are invertebrates. They are further subdivided into

a.       MOLLUSCS: their body is enclosed inside the shell. The shells increase at the rate of one ring per year to allow for the growth of the fish. The age of the mollusk therefore can be roughly estimated by the number of rings on the shell. Mollusk are of two types-

¨       UNIVALVES: body is inside one whole shell. Eg. Whelks and Whinkles.

¨       BIVALVES: have two distinctly separate shells joined by a hinge – like membrane. The movements of the shell are controlled by a strong muscle. When the muscle relaxes, the two halves of the shell fall open. Eg. Oysters, scallops, mussels, clams, cockles etc.

       
b.       CRUSTACEANS:  these have a segmented, crust like shell. Ex. Lobsters, crabs, prawns, shrimps. The shells of crustaceans do not grow with the fish, but are shed each year, with a new one grow with the fish, but are shed each year, with a new one forming to suit their new size.




SELECTION OF FIN FISH FOR COOKING

·         Eyes should be bright, not sunken.
·         Grills should be red.
·         Tail should be stiff.
·         Flesh should be firm and not flabby.
·         The scales if any should be plentiful.
·         There should be no unpleasant odour  (ammonia gas).
·         To test a cut piece, press down with the finger, and if an impression is left, then the fish is stale.
·         Fish should natural covering of mucous on the body.
·         Should appear heavy in accordance to the size. Light fish shows signs of de – hydration.
·         Always try to purchase fish without any wounds or bruises.


SELECTION OF SHELLFISH FOR COOKING
·         It is always advisable to purchase the shellfish alive.
·         Do not buy mollusk with opened shell.
·         Prawns shells should be grayish green.
·         Shells of crustaceans should be firm.
·         Legs of lobsters and crayfish should be firm and claws springy.
·         In case of live crabs and lobsters, there should be movement of legs.
·         The lobster tail should be curled under the body.
·         In case of squids, it should have mild odour.
·         Oysters should be plump and should have a natural creamy colour with clear liquid.

FISH (Le Poisson)

DEFINITION:
Fish, as an aquatic animal is defined as a cold-blooded vertebrate living in water, swimming with the help of fins and breathing with the help of gills.



CHARACTER OF FISH-
  •         Fish possess a wide variety of external shapes and forms. The most common is the FUSIFORM (streamline). This shape is ideal as it offers minimum resistance for movement in water. All the fast swimming fish have this shaped body. For eg. mackerel, sardine, tuna, seer fish etc.
  •          Some fish have compressed body (COMPRESSIFORM), depressed body (DEPRESSIFORM) and some fish have cylindrical body shape (FILIFORM).
  •          The fish have fins (paired and unpaired) that aid them in swimming.
  •          The gills are used for breathing.
  •          Fish have a protective covering over their skin called scales, although some fish may be ‘naked’.
  •          Fish have eyes and smelling organs. The latter are located in nasal pits. The fish do not have external ears, although, inner ear system called labyrinth exists.
  •          Some of the fish also possess a swim bladder, which functions as a hydro-static organ.

COCKTAIL SNACKS!!

CHEEZY ROLLS

Cottage cheese 100gms
Processed cheese 20gms
Chopped ginger 5gms
Chopped celery 5gms
Chopped carrots 10gms
Chopped capsicum 10gms
Salt to taste
Egg white 1nos
Dry fenu greek leaves a pinch
Crushed peppercorns 2nos
Chopped coriander 5gms

TO COAT-

Egg 1nos
Flour 15gms
Bread crumbs 50gms
Oil to fry

PREPARATION:

Mash cottage cheese along with cheese. Add in finely chopped / minced vegetables, salt, egg white, dry fenugreek leaves, coriander leaves and peppercorns. Mix thoroughly. Divide into individual portion about 5 to 10 gms each. Shape into neat rolls. Dip in light batter of egg and flour. Apply bread crumbs and deep fry in hot oil until golden and crispy. Drain on an absorbent paper. Serve with potato chips and ketchup.

SOUPS!!

SILKY BROCCOLI SOUP              (4servings)

Fresh broccoli 300gms
Onions 20gms
Carrots 10gms
Garlic 4 to 6 cloves                                                            
Butter 15gms
Flour 15gms
Celery 5gms
Stock 500ml
Bay leaf 1nos
Peppercorns 4pcs
Milk 300ml
Salt to taste
Cinnamon 1 stick
Spinach 2 leaves

GARNISH-                                

Whipped cream
Boiled broccoli

PREPARATION:

Fine chop all vegetables. Melt butter, saute onion and garlic for a few seconds. Add flour, carrots, broccoli, bay leaf, spinach, peppercorn and cinnamon stick. Stir for a minute. Add in stock and milk. Bring to boil. Remove scum. Lower heat and simmer for 20 minutes. Strain the liquid. Remove the spices. Puree the vegetables. Add back to the liquid. Reboil, pass through a soup strainer. Add salt and pepper. Pour into 4 soup cups.
Garnish with whipped cream and boiled broccoli flowerettes.
